<div>Wild Rice and Corn Salad: Ingredients:2 cups cooked wild rice, 3/4 cup corn kernels, fresh or frozen (defrosted), 2 green onions, sliced, 1/4-1/2 cup finely chopped mint, 3 Tbsp. chopped walnuts, 2 Tbsp. chopped red onion, 1 Tbsp. rice vinegar, 1 Tbsp. extra virgin olive oil, Salt and freshly ground black pepper, to taste. Directions: In a large bowl, combine the wild rice, corn, green onions, mint, nuts and red onion. In a small bowl, whisk together the vinegar and oil and add them to the rice mixture. Toss to combine the ingredients and season with salt and pepper. If possible, cover and let the salad stand for 30 minutes before serving it to allow the flavors to develop. This dish keeps for 24 hours if it is tightly covered and refrigerated. Makes: 6 servings. Nutritional Information (Per serving): 110 calories, 5 g total fat (less than 1g saturated fat), 16 g carbohydrate, 3 g protein, 2 g dietary fiber, 50 mg sodium. Provided by: A.I.C.R.</div>

<div>Older women who strength train with weights can lose significant amounts of abdominal fat. Abdominal fat is a risk factor for heart attacks and other heart problems, so it&#8217;s a good idea to reduce waist circumference and abdominal fat if you&#8217;re overweight or obese. According to researchers published in a recent issue of Medicine and Science in Sports and Exercise, Twelve women and 14 men between 61 and 77 years old participated in a strength training program three times a week for six months. During each training session, the study participants completed two sets of 10 repetitions of several strength-training exercises. Before and after the study began, the participants completed strength tests and underwent body composition testing, which measured their bone density, muscle mass and fat mass. Although both men and women increased their strength, increased muscle mass and decreased body fat levels as the result of the training, women lost significantly more abdominal fat than the men.</div>

<div>Chocolate Peanut Buddy Bars: Makes: 4 servings. Ingredients: 1/8 cup All purpose flour, 1/8 cup Peanut Butter, 1/8 teaspoon Salt, 3/4 Tablespoon Butter, 1/4 cup Sugar, 1/8 teaspoon Vanilla extract, 3/8 large Egg, 1-1/2 ounces Chocolate chips, semi-sweet, Directions: Preheat oven to 350 degrees F. In a bowl, beat peanut butter and butter until smooth. Add sugar, eggs and vanilla; beat until creamy. Blend in flour and salt. Stir in 1 cup chocolate chips. Spread into ungreased 13&#215;9-inch baking pan. Bake 25 to 30 minutes or until edges begin to brown. Immediately sprinkle with remaining mini morsels. Let stand 5 minutes until morsels become shiny and soft. Spread morsels evenly over top. Cool completely. Cut into 1-1/2 inch bars. Nutritional Information (per portion): Calories: 101.39cal, Protein: 2.36g, Fat: 5.62g, Cholesterol: 17.44mg, Fiber: 0.47g.</div>

<div>Trans fats are artificial fats made when hydrogen gas reacts with oil&#8211; by a process called hydrogenation. Hydrogenation increases the shelf life and flavor stability of foods containing these fats. Trans fats pose a higher risk of heart disease than saturated fats, which were once believed to be the worst kind of fats. While it is true that saturated fats &#8212; found in butter, cheese and beef, for example &#8212; raise total cholesterol levels, trans fats go a step further. Trans fats not only raise total cholesterol levels, they also deplete good cholesterol (HDL), which helps protect against heart disease. Avoid foods labeled &#8220;&#8221;hydrogenated or partially hydrogenated canola, soybean or cottonseed oil.&#8221;"</div>

Place over high heat and bring to a boil; reduce heat, cover, and simmer for 35-40 minutes. Taste and adjust seasonings if necessary.
